I'm sure I got the idea from somewhere but as I have gotten older I can't remember every detail. - 1 box jumbo shells
- Olive oil
- Sea salt
- Italian seasoning
- 2 cups Mojo marinade
- 3 chicken breast
- 3 vine ripe tomatoes
- 1 (28 oz) can of tomatoes puree or puree yourself
- 15 oz ricotta cheese
- 1/2 lb mozzarella sandwich size sliced
- 1 tbsp minced garlic
Instructions to make to make Stuffed Shells
- The night before the meal I take the chicken breast and cut them into 1/2 pieces, don't worry they shrink as they cook. After cutting them, I fork them and sprinkle with sea salt. Put the pieces into a Ziploc bag and add the mojo. Seal and stick in fridge overnight to marinate. A half hour before prep and cook take the bag out and let rest.
- Once you are ready to prepare the meal use a 1.5qt glass baking dish and pour contents of the bag into dish. The chicken should sit in the marinade about halfway. It should not cover the chicken. Preheat a conventional oven to 350°. Once it is ready put the chicken in the oven and set timer for 25 min.
- I like to prep my tomatoes as dicing can take me some time. I'm a single mom and not a chef lol, so I put this as a next step. If you are faster and more experienced with a knife you can do this step at the time of sauce making. Wash tomatoes and on a cutting board, dice into small pieces. Place in another stockpot and add a little sea salt and olive oil.
- Next, in a mixing bowl, put about half the container of ricotta cheese in bowl and add 1/2 tbsp of italian seasoning. Mix well and set aside to allow it to soften and the temperature to come up a bit. If cheese is too cold the shells will not cook properly or taste very good.
- Next, in a stockpot, or any pot you use for pasta, coat bottom of pot with olive oil and then fill it with enough water to cover shells. Add sea salt to season and 1/3 cup olive oil. Bring water to a boil and then add shells. Reduce and cook shells until they are al dente.
- Then, put the stockpot with the tomatoes and put it on the stove and lightly saute tomatoes. Add puree, 1/3 cup olive oil, 1tbsp minced garlic (optional) and 3 tbsp of italian seasoning. Bring to medium temp and cover.
- At this time I take the chicken out of the oven and drain marinade from the pan carefully as you don't want the chicken falling out of the pan. Put back in the oven to finish cooking.
- The shells should be cooked by this time. Remove from the burner and drain water and pasta in a metal colander. Allow shells to cool off and if possible look through them and throw out any shells that are not whole or split.
- Once chicken is done remove from oven and allow it to rest. Rest time for chicken and shells should be about 7 min.
- For me, this is the fun part to do with a significant other. Take out a cookie sheet and line it with foil. Lightly coat foil with olive oil. Next, take a shell, have one person hold the shell open carefully. The other person will then put a spoonful of ricotta cheese in shell. This can get messy but it is fun. Then, place a piece of chicken in the shell and allow it to close naturally. One side should fold over the other.
- Place first shell on cookie sheet. Repeat this process 5 times per person. When placing the shells on the sheet the points should be in a diagonal position. When 5 are completed it should look like petals of a flower or star and the points in the middle should touch.
- Once you have completed desired servings, turn temp of the oven to 400°. While temp is rising, take out mozzarella cheese and place a slice on top of each set of five, the middle of cheese should line with the middle of the setting of shells.
- Then when oven is ready place sheet in oven for about 7 to 10 minutes, or until cheese has melted. It should not be brown at all. Remove from oven and allow to rest.
- This next part can be tricky. It took me a while, but sometimes I still mess it up lol. Using 2 large spatulas, place on each side of setting and lift off onto plate. You may have to reposition them and that is okay. It happens.
- Finally, ladle pasta sauce over the flower. Add other things on top for look if desired. Serve and enjoy!
